I'm not sure if there is a map that details what he did specifically. But, there is a great report, ""San Francisco Waterfront" by Roger L. and Nancy L. Olmstead, 1977" available at the San Francisco Public Library-History Center (and possibly elsewhere) that has a few maps and lots of history.
